Buyers in Mexico, Brazil, Chile, Argentina and the Caribbean should compare the selected grade in the actual recipe and process before approving a commercial shipment.
Start with the finished-product target
Define the desired bite, juiciness, protein claim, color, flavor and cooking behavior. A burger, nugget, filling and high-moisture extruded structure place different demands on the protein. The protein percentage is only one part of the decision.

Compare hydration and texture under realistic conditions
- Measure water absorption at the intended salt level and pH.
- Check dispersion before adding oil, hydrocolloids or flavors.
- Evaluate firmness, cohesiveness and cooking loss in the complete formula.
- For extrusion, record feed moisture, temperature, pressure and specific mechanical energy.
- Repeat the preferred formula after chilled or frozen storage.
Bench-top hydration tests are useful for screening, but they do not replace pilot work. Interactions with starch, fiber, oil and binding systems can change the result substantially.
Review flavor, color and processing consistency
Pea protein may contribute characteristic flavor and color notes. Evaluate the unflavored base before masking, then test the final seasoning system. Buyers should also compare lot-to-lot color, dispersibility and moisture because small changes can affect a tightly controlled process.
Build a supplier qualification file
Request the current TDS and representative COA for the quoted grade. Confirm whether protein is reported on an as-is or dry basis, and review agreed limits for moisture, ash, microbiology and relevant physical parameters. For projects requiring non-GMO or organic documentation, confirm that the scope applies to the quoted product and manufacturing site.
Packaging, pallet configuration, humidity protection and container utilization should be evaluated together with price. Importers should also confirm destination-market labeling, customs and food-use requirements with local specialists.
Use a controlled scale-up sequence
- Screen one or two technically suitable grades.
- Run a complete-formula bench trial.
- Set measurable sensory and processing acceptance criteria.
- Repeat at pilot scale on representative equipment.
- Approve the commercial specification before the first bulk order.
