Selecting pea protein is not only a question of protein percentage. The best grade is the one that matches the product format, process conditions, sensory target, labeling needs and destination-market requirements.
Start with the Finished Product
Define the application before comparing samples. A beverage may prioritize dispersibility and suspension, while a meat analogue may prioritize water binding and texture. Bakery, nutrition powder and snack applications can require different particle size, flavor and processing performance.
Compare Grade and Functional Performance
Ask suppliers to identify the protein basis, typical protein range and intended grade. Evaluate solubility or dispersibility, water and oil binding, emulsification, gel or texture contribution, and heat or shear tolerance where these properties matter. A higher protein number does not automatically mean better performance in every formula.
Review Flavor, Color and Particle Size
Pea proteins can differ in beany notes, bitterness, color and mouthfeel. Review a representative sample in the real formula rather than in water alone. Particle size can influence hydration, dusting, mixing and perceived grittiness.
Check Processing and Formulation Compatibility
Record pH, temperature, shear, hydration time, addition sequence and dosage during trials. Compare the candidate against a control using the same process. Also review compatibility with flavors, minerals, gums, oils and other proteins.
Verify Documents and Supply Conditions
Request the current specification, TDS, SDS, allergen statement, non-GMO statement when applicable, microbiological limits and a batch COA. Confirm manufacturing location, available certifications, packaging, shelf life, minimum order quantity, lead time and traceability before approval.
Use a Practical Trial Checklist
Set pass-or-fail criteria for nutrition, flavor, color, texture, stability and process yield. Test at more than one dosage when possible and retain samples from approved lots. Final suitability should be confirmed by the buyer for the intended product and market.
