Vital wheat gluten for food structure and aquafeed performance
Vital wheat gluten is produced from wheat through separation, purification and drying. Selected grades provide high protein together with viscoelasticity, extensibility, water absorption, heat coagulation, emulsification and film-forming properties.
In food, these properties support dough strength, volume, texture, binding and plant-based structure. In aquafeed, vital wheat gluten provides highly digestible protein and valuable pellet-binding performance, helping improve hardness, durability and water stability. It contains wheat and gluten and must be declared accordingly.
